Soup


Creamy Tomato and Artichoke Soup

2 cans chopped tomatoes
2 cups half and half
1 cup artichoke hearts, marinated and packed in oil, drained but not rinsed
2 cloves garlic
1 tsp. chopped onion (i did like 1/4 cup)
1 tsp. tarragon
2 tsp. dill weed
1 tbsp. butter
1 tsp. olive oil
Salt and Pepper to taste
1 cup water
1 tsp. hot sauce (or more...it's all optional)
2 green onions chopped

In a food processor or blender, add tomatoes (juice included) and artichokes. Blend until smooth. Saute the garlic and onion in the olive oil and butter. Add the blended tomato mixture to the sauteed garlic and onions. Pour one cup of water into the processor or blender and blitz it to rinse. Add that cup of water to the pot of tomato mixture. Add half and half and simmer for 20 minutes. Add tarragon, dill weed, salt and pepper and hot sauce. Garnish with a dollop of sour cream and chopped green onions.

I served with the MOST amazing Panini. Asiago Cheese bread with smoked turkey, tomatoes, pesto and then a sun dried tomato/pesto and something else sauce that is to die for! But the Asiago bread from Kroger was complete heaven!

Yum, that sounds so good!!!! We have been loving tomato basil soup lately but I'll have to try this one now!

yay! that looks so yum! I think we are doing SOUPS for recipe club this week--bring that one!
